Adapted from Baked By An Introvert

  • 2 oranges, thinly and evenly sliced (using a mandolin works great for this)

  • 2 cups water

  • 2 cups sugar

  1. Prepare a large bowl with ice water. Set aside.

  2. Bring a large saucepan filled halfway with water to a boil over medium-high heat. Add the orange slices and boil for 2 minutes. Quickly transfer the orange slices from the saucepan to the bowl with the ice water. Discard the water in the saucepan.

  3. Reduce the stove to medium heat. Add 2 cups of water and the sugar to the saucepan and bring it to a boil, stirring occasionally to help dissolve the sugar.

  4. Reduce the stove to medium-low heat. Add the orange slices and let them simmer until the rinds start turning translucent, about 45-60 minutes. Gently swirl the oranges every 10-15 minutes, making sure they are evenly coated with the sugar syrup.

  5. Transfer the slices to a cooling rack. Let them sit until they are dry, no more than 24 hours.

  6. Enjoy!
