Fudgy Cherry Chocolate Blondies

  • ½ cup (1 stick) (112.5 grams) unsalted European butter, softened to room temperature

  • 1 cup (225 grams) light brown sugar, packed

  • 2 teaspoons vanilla extract

  • ¼ teaspoon salt

  • 1 large egg, room temperature

  • 1⅓ - 1½ cups (320-360 grams) all-purpose flour, sifted

    • Amount of flour will depend on how juicy your cherries are and how soft you want the blondies. The fudgier and softer you want the blondies, the less flour you should use

  • ¾ - 1 cup semi-sweet chocolate chips

  • 1 cup (225 grams) fresh cherries, pitted, halved, and quartered


  1. Preheat oven to 350° F (175° C). Line your baking dish with aluminum foil and grease the inside with butter or cooking spray. Set aside.

  2. In a a large mixing bowl, add the softened butter and brown sugar. Using a standing or handheld mixer, whip the butter until light and fluffy, about 1-2 minutes.

  3. Add the vanilla extract and salt and briefly stir to combine. Add the egg and mix until incorporated.

  4. Gradually add the flour and stir until just combined, making sure not to over mix the batter.

  5. Fold in the chocolate chips and cherries until they are evenly dispersed throughout the batter. Pour the batter into pan and smooth the top with a spatula to give yourself an even layer.

    • The batter will be stiffer, like cookie dough, rather than a softer brownie batter.

  6. Bake for 28 minutes before checking on the blondies. You will almost certainly have to bake them for longer, between 4-15 additional minutes. They’ll be done when the edges and top are golden brown and the center is still a bit soft.

    • Baking times will vary, as the type of butter you use, the moisture content of the fruit, and how fudgy you like your blondies will dictate how long you bake the blondies for

    • Be aware that a toothpick inserted into the middle most likely won’t come out clean due to the chocolate chips and juicy cherries.

    • The blondies will set once cool, so be sure not to over bake them!

  7. Allow the blondies to cool, which will help them set, for at least 1 hour before slicing and serving.
