Chocolate Chip Banana Bread Muffins


Makes 6-8 muffins

  • 1 cup all-purpose flour

  • ⅔ teaspoon baking powder

  • ⅔ teaspoon baking soda

  • ½ teaspoon salt

  • 1 teaspoon cinnamon

  • ¼ teaspoon all-spice

  • 2 ripe bananas, peeled

  • 4 tablespoons melted butter, plus a bit more for greasing the pan

  • 100 grams brown sugar

  • 1 egg

  • 1 teaspoon vanilla extract

  • 20 milliliters milk

  • ¼-⅓ cup chocolate chips, or baking chocolate


  1. Preheat the oven to 425° F (218° C). Grease a muffin/cupcake tin with a bit of butter.

  2. In a small bowl, sift the flour before adding the baking powder, baking soda, salt, cinnamon, and all spice. Mix everything together until well blended.

  3. In a large mixing bowl, mash the bananas until creamy, with no solid pieces left. Whisk in the melted butter, brown sugar, egg, vanilla extra, and milk until everything is combined and takes on a smoother, more batter-like consistency.

  4. Slowly pour the flour mixture into the banana mixture as you continue whisking. Once all of the flour has been incorporated, add in the chocolate chips and mix until well blended.

  5. Carefully pour the batter into the muffin tin, leaving 1-inch between the batter and the top of the mold (the muffins will expand up.

  6. Put in the oven and bake for 5 minutes.

  7. Leaving the oven door closed, reduce the heat to 350° F (177° C) and continue baking for an additional 16-18 minutes, or until a toothpick through the deepest part of the muffin comes out clean.

  8. Let cool for a few minutes before removing the muffins from the mold.
