Mustard-Based Carolina-Style BBQ Sauce


Makes about 1½ cups

  • 1 cup yellow mustard

  • ½ cup granulated sugar

  • ⅓ cup light brown sugar

  • ¾ cup cider vinegar

  • ¼ cup water

  • 2 tablespoons chili powder

  • 2 teaspoons freshly ground black pepper

  • ½ teaspoon cayenne pepper

  • 1 teaspoon soy sauce

  • 2 tablespoons unsalted butter

  • 1 teaspoon sauce from chili in adobo sauce

  • ½ teaspoon smoked paprika (add an additional ½ teaspoon is you don’t have chilis in adobo sauce)


  1. In a medium saucepan, combine all the ingredients, except the soy sauce, butter, chili in adobo sauce, and smoked paprika. Whisk everything together until smooth and simmer on low for 20 minutes. Stir occasionally.

  2. Add the soy sauce, butter, chili in adobo sauce, and smoked paprika and simmer for 10 more minutes.

  3. Remove the sauce from heat and allow the mixture to cool for 10 - 15 minutes before using it in your favorite barbecue recipe. Once cooled, refrigerate any sauce you’re not using right away.
