Roasted Purple Sweet Potatoes

Serves 4

  • 2 purple sweet potatoes, diced to bite-sized pieces

  • 1½ tablespoon olive oil

  • ¼ teaspoon salt

  • ¼ teaspoon pepper


  1. Heat oven to 425°F. As the oven heats up, put the diced sweet potatoes in a large mixing bowl. Add the olive oil, salt, and pepper to the bowl. Mix until all of the sweet potatoes are coated in oil, salt, and pepper.

  2. Put the diced sweet potatoes on a baking tray. Bake for 20 minutes and check the sweet potatoes. Mix them up on the baking sheet and reassess baking time. Expect another 5 minutes of baking, but if you want them even crispier, bake for another 10 minutes before reassessing again. Be sure not to bake them too long or they’ll burn!
