Spicy Andouille Sausage with Yellow Rice

Serves 4

Adapted from delish

  • Olive oil

  • 1 pound andouille sausage, cut into bite-zed pieces

  • 1 onion, diced

  • 1 bell pepper, diced

  • 2-3 cloves garlic, minced

  • 1 teaspoon cayenne pepper

  • 2 sprigs fresh thyme

  • 2 teaspoons hot sauce (adjust according to hot sauce spiciness)

  • 1 teaspoon dried oregano

  • 1 (16 ounce) can red beans, drained and rinsed

  • Salt and pepper

  • Yellow rice, for serving (prepared according to packaging)

  • Green onions, for serving


  1. Heat a medium pot over medium heat. Add 1 tablespoon of olive oil and heat. Once heated, add sausage pieces and cook until slightly brown.

  2. Add onions and bell peppers and cook until softened and onions have a glassy shimmer, about 4 minutes.

  3. Add garlic and cook until fragrant, stirring occasionally, about 2-3 minutes. Add cayenne pepper, fresh thyme, hot sauce, dried oregano, and red beans to the pot. Stir until well combined.

  4. Simmer for 10 minutes, until beans are are fully heated and have become somewhat softer. Season with salt and pepper, to taste. Feel free to add a few tablespoons of water if you want it more saucy, but be sure to let it simmer for a bit longer so the water has time to blend, about another 10 minutes.

  5. Serve over yellow rice and garnish with green onions.

  6. Enjoy!
