Summer Berry, Feta, and Walnut Salad with Maple Balsamic Vinaigrette

Serves 2

  • ¼ cup olive oil

  • 2 tablespoons balsamic vinegar

  • ¼ teaspoon Dijon mustard

  • 1 tablespoon maple syrup

  • Salt

  • Pepper

  • 4-6 handfuls of your preferred lettuce

  • 1½ cup strawberries, cut into bit-sized pieces (quartered or smaller)

  • 1 cup blueberries

  • ½ inch red onion, cut into half and then thinly sliced

  • ¼ cup walnuts, coarsely chopped

  • 1-2 ounces feta cheese, crumbled

  • 1 green onion, thinly sliced


  1. In a bowl or a jar, mix together the olive oil, balsamic vinegar, Dijon mustard, maple syrup, and salt and pepper, to taste. Keep mixing until emulsified. Set aside.

  2. Whether you’re serving directly on plates or in a serving bowl, add the salad ingredients in this order: lay a bed of lettuce at the bottom, sprinkle the strawberries, blueberries, and red onions on top, and finish with the walnuts, feta, and green onions. Drizzle the maple balsamic vinaigrette over the salad.
