Sweet Potato Toast

  • 1 sweet potatoes, cut lengthwise into ½ - ⅓ inch thick slices

    • Find tube-shaped sweet potatoes, rather than rounder ones

  • Your favorite breakfast toppings! Here are a few ideas:

    • Yogurt + berries (blueberries, raspberries, strawberry slices) + coconut shreds + honey or agave

    • Peanut butter + sliced banana + chopped pecans + maple syrup

    • Cream cheese + strawberry jam + blueberries + chia seeds

    • Sliced or mashed avocado + salt + pepper


  1. Toast the sweet potato slices in a toaster the same way you would do with bread. Check to see if the slices are fork tender. I’d suggest turning the toaster to the highest setting you’re comfortable with. Depending on your toaster, you may need to toast the slices a few times before they fork tender, so cranking the toaster setting up helps speeds up this process.

  2. Top with your favorite breakfast toppings.

  3. Enjoy!
