Caprese Pesto Salad

Serves 4-6, as a side dish

  • 2 – 3 cups cherry tomatoes, quartered or eighthed (fresh tomatoes, such as those from your garden or from a farmers market, are preferred as they tend to be sweeter and have more flavor)

  • 8 ounces fresh mozzarella (either as a block that you break up or as ciliegine, which are preformed small mozzarella balls)

  • 1-2 teaspoon pesto (you can find a great recipe here: Pesto)

  • ½ teaspoon salt

  • ½ - 1 tablespoon olive oil

  • 10-15 larger, fresh basil leaves, coarsely chopped (about 1-2 tablespoons once they’ve been chopped)


  1. In a medium mixing bowl, combine all of the ingredients and mix them together well. Taste and adjust the ingredients and seasoning to your preferences.
