Caprese Pesto Salad
Serves 4-6, as a side dish
2 – 3 cups cherry tomatoes, quartered or eighthed (fresh tomatoes, such as those from your garden or from a farmers market, are preferred as they tend to be sweeter and have more flavor)
8 ounces fresh mozzarella (either as a block that you break up or as ciliegine, which are preformed small mozzarella balls)
1-2 teaspoon pesto (you can find a great recipe here: Pesto)
½ teaspoon salt
½ - 1 tablespoon olive oil
10-15 larger, fresh basil leaves, coarsely chopped (about 1-2 tablespoons once they’ve been chopped)
In a medium mixing bowl, combine all of the ingredients and mix them together well. Taste and adjust the ingredients and seasoning to your preferences.
