Summer Veggie Medley Pasta

  • 1 medium carrot, cut into large chunks

  • 1 bell pepper, seeded and cut into large chunks

  • 1 medium zucchini, cut into large chunks

  • 1 Roma tomato, cut into large chunks

  • 2 garlic cloves, smashed

  • 1 teaspoon salt

  • ½ teaspoon pepper

  • 1 packed tablespoon fresh basil leaves

  • 10 ounces pasta, cooked al dente according to packaging


  1. In a large blender or food processor, mix everything but the noodles together. Blend until there are no more large chunks in the sauce. This can take 1-2 minutes of continuous blending. Taste and adjust seasoning to preferences.

  2. Pour the sauce over your pasta and mix until the sauce has been evenly dispersed.

  3. Enjoy!
