Cheeseburger Chopped Salad
Serves 4

For Salad:
1 tablespoon olive oil
1 pound ground beef
2-3 cloves garlic, minced
Salt and pepper
4 ounces sharp white cheddar cheese, freshly grated
8 cups lettuce
1 pint cherry tomatoes, quartered
⅓ cup chopped dill pickles
¼ cup red onion, diced
For Dill Pickle Dressing:
¼ cup chopped dill pickles
3 tablespoons dill pickle juice, from a jar of dill pickles
1-2 shallots, finely chopped
2-3 cloves garlic, minced
2 teaspoons Dijon mustard
1 teaspoon honey
Salt and pepper
½ cup olive oil
Heat a large skillet over medium heat and add olive oil. Once hot, add the ground beef, garlic, salt and pepper, to taste. Break the beef apart with a wooden spoon and cook until browned, for about 6-8 minutes.
Turn off heat and sprinkle the shredded cheese over the beef, until slightly melted.
In a mixing bowl, combine the dill pickles, dill pickle juice, shallot, garlic, mustard and honey and whisk together. Add salt and pepper, to taste. Add olive oil and mix until emulsified.
Divide the lettuce, ground beef, tomatoes, dill pickles, and red onions onto 4 plates. Drizzle dressing over the salad and mix well.
