Authentic German Sauerkraut


Serves 6, as a side

  • 1-2 tablespoons oil

  • 1 onion, finely diced

  • 1 jar sauerkraut (28.5 ounces)

  • ¼ cup water

  • ½-¾ ripe apple, grated (alternatively, if you don’t have an apple, us apple juice instead of the water)

  • 5 juniper berries


  1. Heat a large pot over medium heat. Add the olive oil and the onions. Stir frequently, until onions start becoming glassy, about 3-5 minutes.

  2. Empty jar of sauerkraut into the pot and add water (add apple juice, instead of water, at this point if you don’t plan on using an apple later).

  3. Add grated apple to pot and stir. Add juniper berries and stir again, making sure everything is well mixed.

  4. Reduce heat to low and let it sit, simmering, for about 20 minutes, stirring occasionally.

  5. Enjoy!
