Couscous with Sultanas and Pine Nuts


Serves 4, as a side

  • ½ liter vegetable or chicken broth

  • 250 grams plain couscous

  • ¼ - ½ cups golden raisins or sultanas

  • 3 tablespoons pine nuts, toasted

  • 1 shallot, finely diced, sautéed

  • 1-2 tablespoons olive oil

  • 1 tablespoon butter, melted


  1. In a medium pot, bring broth to boil. Remove the pot from the heat and immediately mix in couscous. Continue stirring until all of the broth has been absorbed by the couscous.

  2. Fluff the couscous and add in the golden raisins or sultanas, followed by the pine nuts, shallots, olive oil, and butter. Season to taste with salt and pepper.

  3. Enjoy!
