Maple-Balsamic Salad with Apples, Walnuts, and Bacon

Serves 2

  • ¼ cup olive oil

  • 2 teaspoon balsamic vinegar

  • 1 teaspoon Dijon mustard

  • 1 tablespoon pure maple syrup

  • Salt and pepper, to taste

  • 4-6 cups salad greens (I always enjoy mixed greens)

  • 1 apple, halved and cut into thin slices (if the apple is bigger, halve the apple and halve it again before slicing thinly)

  • ½ cup walnuts, coarsely chopped (I like mine bigger so I only chop through them 3-4 times)

  • 4 pieces bacon, cooked and crumbled

  • ½ cup cheese, cubed (I like cheeses with stronger flavors, so I’ll used a Gouda or a cheddar cheese, cut from a block and cubed)


  1. To make the dressing, in a small bowl, combine the olive oil, balsamic vinegar, Dijon mustard, maple syrup, and salt and pepper, to taste. Mix everything together well. Set aside.

  2. To assemble the salad, lay down a bed of salad greens on your plate or in your bowl. Divide up the apples, walnuts, bacon crumbles, and cubed cheese and sprinkle over the salad. Drizzle the dressing over everything.

  3. Enjoy!
